Lunchiepoos
My fiance, Steve, told me I had a few portabello mushrooms in the fridge that I better use up quick since they would be spoiling soon. Gladly! They're the most delicious, meatiest of fungi - don't gotta tell me twice! I love grilling them, but since that option wasn't available, stovetop it was! And they're the easiest things to cook up, too! Drizzled them with avocado oil, my go-to of seasoning salt, pepper, and garlic powder and voila - C'est magnifique! Melted Swiss cheese on top, threw on some aioli for added fats, and the topper, leftover chicken salad. Dang, I'm good.

I'm back, bitches!
I wonder how many times I've said that? Too many to count, I'm sure;\
It's now the 19th of July, 2014 -- Friday morning, 12:45am to be precise. I started back on the keto train as of Monday, and today just happens to be the first day I logged my food into MyFitnessPal. Augh!!!!! Anyway, it wasn't a difficult transition at all, probably because my body was so ready for some kind of harnessing LOL. One of my most fav cousins, Krystle, came-a-visiting and "when in Rome." It also happened to be the beginning of summer, 4th of July time, yadda yadda yadda --- I'm using every last excuse here, but I really did eat all of the things and had absolutely no remorse. I REGRET NOTHING. My fat ass on the other hand....
Back to my transition to keto again: I started on Monday. I haven't been having a hard time of it, really. Mornings my stomach has been feeling queasy, but there was a stomach bug going around - I even accompanied my cousin Eva to the ER to find it out the hard way; there's always the awesome chance that I could be with child??!!! ORRRRR... it's my my TOM coming for a visit, per usual monthly lame ritual. Boo.
Anyway, I feel just fine. Great, in fact. Not great enough to start working out, though. I don't blame my diet on that. I blame just being a sedentary beast in general, and mostly because I work one full time and one part time job and am taking one class short of a full load of classes this summer semester. WTF was I thinking, like seriously? Someone should have punched me in the face when I told them that this is what I was doing. I could be enjoying my rainy summer instead of sitting in front of computer screens constantly. Not gonna lie, though, the fact that it has been crappy weather makes it a whole lot easier for me to get homework done. Shhh! Our little secret. I'm certainly not wishing bad weather for everyone else. That would be wrong:P
Anyhoozers, back to my fattiness and why I'm here on this blog at this moment in time. I made something! I don't make too much, which is why I'm bragging. And so I did. I followed a recipe from LowCarbElla and it came out perfect! I needed low carb buns for my burgers and really I was super lazy and this took less than 5 minutes, which is why I did it. You should try!
